- Ideally use an electric mixing bowl for this recipe, though it’s also fine to mix by hand, just allow more time to get the dough consistent
- In a mixing bowl add the flour, yeast and pinch of salt into a mix
- Make a well in the middle and add the water and olive oil
- Begin mixing with a paddle for approx 5 mins, until the dough is smooth and consistent
- Cover the bowl with clingfilm and leave to prove in cool environment for around 1.5 hours, until it’s doubled in size
- Take the dough out of the bowl and place on a well floured surface
- Knock the dough back and knead again until smooth
- Roll into a ball and set aside for another hour
- Preheat the oven to 180°C Fan / 350°F / Gas Mark 6
- Roll out the dough and make into a heart shape, pinching the sides to make the crust
- Brush with olive oil
- Spread a layer of tomato passata over the pizza
- Sprinkle over the layer of Godminster Cheddar
- Spread the remaining Neufchatel and Coeur du Berry cheese chunks all over the pizza base
- Add any additional toppings you may want such as spicy sausage, mushroom, sweetcorn, spinach, cooked chicken, olives etc.
- Sprinkle with oregano and/or rosemary
- Bake on a pizza tray or grate, for 10-12 minutes
- Remove and place basil leaves on top
- Leave to cool, then serve with fresh green rocket
