Rarebit with Comte
Ingredients
(Serves 4)
225g (8oz) Comte
30g (1oz) butter
1 tsp English mustard
1 egg, beaten
salt and pepper
4 slices of farmhouse bread, lightly toasted
a few drops Tabasco or Worcestershire sauce
How to make it
Hot cheese sauce served over slices of toasted bread, what’s not to like? Comte offers a rich full flavour to boot. Traditionally a ‘Welsh’ rarebit, we’re creating an Alpine version with creamy Comte.
- Heat the oven to 220C (200 in a fan oven).
- Toast the bread
- Grate the Celtic Promise
- Add to a mix of the English mustard, egg and tabasco
- Season with salt and pepper
- Butter the bread
- Spread onto buttered toast
- Pop in the oven for 5 – 10 mins until browned and gorgeous
Rarebit is great for lunch, or you could use small chunks of bread and serve as canapes!
