Gorgonzola Blue Cheese Ice Cream

- Heat cream until almost boiling in small saucepan
- While cream is heating, whisk egg yolks and caster sugar until light and fluffy
- Stir egg and sugar mixture into cream on low heat until thick and coating the back of a spoon
- Crumble gorgonzola and stir to melt
- Start with 100g of the cheese and taste it
- Keep adding until you feel you’ve got the right amount
- Freeze overnight
- Serve the Blue Cheese Ice Cream with poached pear
