Caramelized Onion Tart with Goat Cheese and Thyme
Ingredients
1 sheet of puff pastry, at room temperature
30g butter
2 large onions, thinly sliced
2 tbsp. brown sugar
kosher salt
Freshly ground black pepper
250g goat’s cheese, crumbled
10 fresh thyme sprigs
How to make it
This super fancy Caramelised Onion Tart is also super easy, if you use pre-prepared puff pastry. Serve it warm or at room temperature.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper
- On a floured surface, roll out puff pastry to a 9″-x-13″ rectangle, then transfer puff pastry to the prepared baking sheet and prick all over with a fork
- Bake until golden brown, 15 minutes, then let cool slightly
- Meanwhile, in a large pot, warm the butter over medium-high heat
- Add onions and cook until golden, 10 minutes, then add brown sugar and cook 5 minutes more
- Season with salt and pepper
- Spread caramelized onions over puff pastry, leaving a 1/2″ board around the edges
- Sprinkle with goat’s cheese and scatter thyme sprigs on top
- Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes
- Let the tart cool slightly, then cut into squares and serve
