What’s it like? Tête de Moine has a gorgeous alpine milky taste similar to Gruyere.
Where’s it from? Made throughout the area of the Bernese Jura under strict AOC guidelines.
Packaging: This is the AOC UNPASTEURISED 900g whole cheese in a truckle.
‘Tete de Moine’ means Monk’s Head which gives a clue to its religious roots. It was invented by Monks in the Jura and is now made exclusively by a small selection of dairies.
The savoury, nutty flavours of this Swiss cheese is best served with full bodied wines, such as a Burgundy (like this Christophe et Fils Chablis – Vielles Vignes 2015) or for a red try a Rhône, like Reserve de Pierre 2015 – the big flavours of this beefy cheese deserve a full flavoured wine.

Tete De Moine
Originally Swiss, this cheese was renamed Tete de Moine following the french revolution, and adopted by the french in the east.
The cheese has a wonderful smell and has a subtle but strong flavour, if that makes sense. Best eaten having been shaved on a ‘Girolle’ releasing the smell and almost fruity flavour. The cheese should not be too warm, as it does not shave well when it softens. Girolles are not cheap in the UK but we paid 25 Euros in Bordeaux this year.
