What does Jarlsberg Special Reserve taste like? This exclusive variety of Jarlsberg is ripened for a minimum of 12 months. The ageing process retains the characteristic flavours and aromas, but intensifies them to produce a stronger, more robust cheese.
Where’s it from? The story of the cheese that we today call Jarlsberg goes all the way back to the 1950s. It all started in the small Norwegian village called Ås and a professor, Ole Martin Ystgaard, who was leading a long-term research project at the Dairy Institute at the Agricultural University of Norway. The project started in 1956 and continued for about 10 years until Professor Ystgaard decided that the development phase was complete.
Packaging: Jarlsberg Special Reserve is PASTEURISED and comes as a wrapped wedge of 200g. Jarlsberg Special Reserve is naturally lactose-free and suitable for vegetarians.

Wild stews in Norway include a handful or so of wild mushrooms and it’s common to toss in a few slices of Gjetost Cheese to add more richness and depth to the overall flavour. The milk of Gjestost comes from cattle that graze on wild fungi so the flavours seem to intensify in this recipe.
