Perfect combination of flavours
The Cropwell Bishop Stilton was strong without being overpowering, and was the perfect ingredient for a different take on a lobster thermidor. Of course, it was just as excellent with a simple cracker.
The Westcombe Cheddar was sufficiently mature without being too crumbly, and has a distinctive “farm fresh” smell that reminded of my school days in Somerset where all of the cheese was locally sourced.
The Bosworth Ash log was a nice contrast in flavour, clean and fresh but with a pleasant earthy woodiness. It was perfect just by itself – cut into thin slices – and with a lightly-salted cracker.
Camembert has for a long time been one of my favourite continental cheeses, and this one was close to perfect. I left it to ripen as much as possible – it was opened long after the other three items were finished – and it was perfectly delicious and unctuous.
